Santa Rosa Jáuregui combines the delegation’s carnitas culture with a history that can be traced through the Parroquia de Santa Rosa de Lima. A stay here can also include Parque Bicentenario and nearby destinations offering nature and leisure activities. When choosing a hotel for your trip, it helps to first decide what you want to focus on: local history and gastronomy, visits to the park, or outdoor activities will lead to different itineraries.

Local History and Religious Heritage

The first twelve founding families of Santa Rosa settled around the Parroquia de Santa Rosa de Lima. The parish’s development can also be placed in historical context: the Ayuda de Parroquia de Santa Rosa de Lima was established in the last third of the 18th century and elevated to an independent parish in 1805. The parish’s baptismal, marriage, and diocesan decree books from 1753 are considered part of Santa Rosa Jáuregui’s cultural and historical heritage. Thus, the founding families, the development of the parish, and church records all form part of the area’s history.

Carnitas and Celebration Dates

Carnitas are considered a signature dish in the Santa Rosa Jáuregui delegation. The legislature of the state of Querétaro recognized the carnitas of Santa Rosa Jáuregui for their historical, cultural, gastronomic, and economic significance; this was recorded in the Gaceta Legislativa on August 25, 2025.

On March 13, the anniversary of Santa Rosa’s founding in 1753 is celebrated with a variety of cultural, gastronomic, and leisure activities. The specific program may vary. The patronal celebration of the Virgen de Santa Rosa de Lima takes place on August 30 in the Santa Rosa Jáuregui delegation.

At the 2026 Feria de las Carnitas, 15 carnitas producers set up food stalls on March 14 and 15. To kick off the event, a giant carnitas taco was prepared and shared among residents and visitors. For planning dates, it is helpful to note the difference: March 13 is the annual anniversary, while the Feria dates refer to the 2026 edition.
